Eat-a-Pita

I love pita pockets. It's a nice change from bread, they are fun to use and versatile. Check out this quick and easy stuffed pita pocket I had for lunch yesterday.

Ingredients:
*One whole wheat pita cut in half
Any veggies, but I used
*sliced tomato
*sliced red and yellow pepper
*spinach and romaine
*1oz feta cheese
*2T hummus

Spread 1T of hummus into each pocket
Crumble .5oz of feta in each pocket
Stuff with meat and veggies
Enjoy! 
Simple isn't it?!

Add any cooked meat like chicken breast, leftover roast, pork, any type of fish would be great. No meat? Add some edamame or grill/sautee' some firm tofu and pack it in! 

Here is the finale' which took all of MAYBE 10 minutes to prepare. It can go MUCH faster when all the veggies are prepped ahead and are just waiting to be eaten!

Combo that with a fresh MI peach and what do you get?
Simply......DALISH!
