Some Spice is Nice

No, not hot and spicy, although I LOVE hot, spicy food; speaking of, I have a great shredded, lean beef recipe that reminds me of the Chipotle Naked Burrito (that's a burrito without the tortilla which is served in a bowl) I get (the 2-3 times a year we actually get Chipotle). I will share that recipe VERY SOON. We had it last week and I forgot (Ergh!) to take pictures, so I could not share! I mean really, what is a blog without pictures ESPECIALLY when it comes to food, right?! But anyway, back to spice...
Here are some spices that are super easy, no brainers to have on hand and use in many dishes. I love and use them ALL the time!

Turn these baby's upside down and grind in several mouthwatering flavors with a few turns of your wrist. Simple. Easy. I love it!


*It's a short, quick, to the point (well, sort of to the point, a bit random) blog because this girl is TIRED! So, I am finally getting this bod to bed :)

Eat-a-Pita

I love pita pockets. It's a nice change from bread, they are fun to use and versatile. Check out this quick and easy stuffed pita pocket I had for lunch yesterday.

Ingredients:
*One whole wheat pita cut in half
Any veggies, but I used
*sliced tomato
*sliced red and yellow pepper
*spinach and romaine
*1oz feta cheese
*2T hummus

Spread 1T of hummus into each pocket
Crumble .5oz of feta in each pocket
Stuff with meat and veggies
Enjoy! 
Simple isn't it?!

Add any cooked meat like chicken breast, leftover roast, pork, any type of fish would be great. No meat? Add some edamame or grill/sautee' some firm tofu and pack it in! 

Here is the finale' which took all of MAYBE 10 minutes to prepare. It can go MUCH faster when all the veggies are prepped ahead and are just waiting to be eaten!

Combo that with a fresh MI peach and what do you get?
Simply......DALISH!

Sneaky Ways to Get Your Veggies

This is a great way to get in some veggies. By using them as your base for just about any dish you really bulk up the dish, add some beautiful color, provide your body with the essential nutrients that come from green veggies, lower your carb and calorie ingestion and feel FULLER LONGER!  I love pasta dishes so here are a few "pasta" dishes I have had with greens as my base :)

Normally I would microwave or heat up in a pan the spinach to warm it and wilt it slightly. This is just fresh, cold spinach. I have grown accustomed to eating it this way with this amount. Wilting it reduces it and changes the texture slightly. It also blends into the dish better. I recommend starting off with at least a cup of any veggie. You may want to start off with a smaller amount then over time increase the amount. Remember, baby steps to change!
Top with some cooked WHOLE WHEAT pasta.
Pour your favorite sauce over the whole thing.
I used ground turkey breast (97% fat free) w/ Bella Vita Low Carb Tomato Basil pasta sauce topped w/ fresh mozzarella cheese.
 My daughter is ready to gobble it up...Haha!
Here is another dish where I used BROCCOLI as my base! This is made simply with sliced boneless, skinless chicken breast that is sauteed in olive oil and fresh pressed garlic. Then add some sea salt, pepper and a shake or two of dried ground thyme. Serve over any veggie (steamed broccoli, sauteed collard greens, spinach or green beans just to name a few) and top with Parmesan, feta or fresh mozzarella cheese!
Here is another pasta dish made with one package of frozen collard greens that I again just sauteed in some olive oil, garlic and a little sea salt (remember, a LITTLE salt, we want to keep sodium DOWN!). This is topped with grated Parmesan cheese!
All three dishes pictured are delicious....I encourage you to get in some veggies by using it as a base in anything including and and all pasta dishes, enchiladas, soups (canned soups can and really SHOULD be bulked up with extra veggies). Pour piping hot soup over some spinach or add in a handful of frozen veggies of your choice as the soup is simmering. Enjoy! Be creative and let me know what you come up with ;)

August-Here and Gone!

The end of August is almost here and I thought I better get out a blog or two (maybe three!) before September arrives. Yikes, can you believe it...SEPTEMBER! I know, it's what we talk about every year; the summer flying by, kids going back to school with fall on our heels but every year seems to sweep past us even faster than the year before.

I hope that you had as wonderful a summer as I've had. As I take a moment to look back and reflect so much has transpired and that's an exciting realization.  Why don't you sit back and take just a few moments right now to look back at the past few months of summer. Recall all that you did, all that you may have accomplished, the friends you visited with, new connections you made, where you went on vacation, the good books you read, the family you BBQ'd with, the games you played, the healing you went through, the transitions both mental and physical, the weather you enjoyed, the kids you spent time with, the walks you took. I could go on and on and on because even if it wasn't a summer of great change or it seemed full of monotony there is ALWAYS something you can take away from it, learn from, grow in or be happy about!

My summer was filled with friends, family, cookouts, bonfires, sunshine, water, fun, relaxing, graduation parties including my own son's from H.S. and my daughter's from Jr. High. I celebrated 15 years of marriage with my husband this past June. It was the perfect summer to celebrate all of these awesome milestones with an end of summer trip to the Lake where we rented a beautiful home right on Lake Michigan. It's really one of my favorite places to go. First of all, I LOVE the water and Lake MI is clean, clear and isn't home to critters such as jelly fish, stingrays or SHARKS :) We can pack up and drive there in a few hours and be ON THE BEACH that afternoon!
This is pretty much what I did ALL week!
This is the man I have spent nearly 20 years of my life with! 


 I pretty much lived in this dress cover-up!
And enjoyed lots of beautiful MI sunsets!

I've learned a lot about myself this summer and what I want in life and who I want to be when I grow up...Heehee. Growing is a wonderful thing and every few years I seem to take new giant leaps into something new, exciting and fun! I'm about due for a change and I'm super excited about the path that I am on! All New-Fitness Friday!

I have focused a bit on food for the first month of my blog and I will continue to do so, although not at the pace I would like. Since I am EveryONEfitnessandfood I would like to add the fitness part to this blog as well. So, let's begin with Fitness Fridays; here is the first installment! As a side note, I hope to add video demo's in the near *fingers crossed* future!

I am currently gym shopping which is a difficult task as I have been in a few different gyms in my life. I am also a trainer in training so I'm a little picky right now as to what I want my gym to look like, so in the interim I am working out at home. I have a pretty good set-up in my basement which consists of a treadmill, an old but functional elliptical and a WIDE variety of free weights, but I also have me, myself and I which in the simplest way is really all one needs, right?! Not everyone has access to a gym nor the means in their budget to afford even the most affordable of gyms. I must note that the Y has a sliding scale rate system where you can apply for a lower rate, there are Y's everywhere and with the sliding scale just about everyone has the ability to join. With that being said there are MANY things you can do at home to get that sweet sweat flowing and engage those muscles!

When I got up this morning I wanted to go down in the basement to get in a good mix of strength training and cardio. I was itching for a full body workout but my son, who has been sleeping in the basement this summer, was down there. So, I began to think, "What does one do when a gym is not available to them?" I began brainstorming and thought I would mix it up upstairs with a few pieces of "equipment."

I did everything in a 10'x5' area on the first floor of my home.

The Warm-up:
  • 30 Jumping Jacks
  • 30 "Jump Ropes" (pretend to jump rope using a single hop or double hop or a combo of each)
  • 30 High Knees
  • 30 Butt Kicks (like quickly running in place, heels "kick" your butt)
The Workout:
I found some video demo's online. I recommend watching the demo's first so you know what to do and how to do it properly :)
Perform each move with little to no rest in between. This keeps your heart rate up wile working various and opposing muscle groups.
The Cool Down and Stretch (Hold each stretch for a min of 15 up to 30 sec.)
DONE! All warmed up, worked out and stretched out right in your own home using what you have!

Sprouted Grain Corn Toritilla TACOS

I love corn tortilla's! I grew up on Mexican food. My dad would take us to the Mexican grocery stores when I was little and we'd stock up on corn tortillas, hot sauce, jalapeno's and avocados along with other goodies to make our own Mexican food at home.
I've been purchasing El Milagro for years now and they were the best tasting corn tortilla's that I knew of with the least filler/processed ingredients. If you hit the grocery store at just the right time you could find them still nice and warm from the factory! Mmmm....I love a good corn tortilla! I even make our own fried corn tortilla chips...MUCH, MUCH, MUCH better than any store bought chip! Tostitos....BLECH...Get rid of it! I guess I'll have to post on how to make your own too?!?! Let me know!!!

So, in my quest for wholeness I found these sprouted corn tortillas which were along side my usual sprouted grain Ezekiel bread (freezer section at the grocery store...NOT shelf stable, thank goodness)! I purchased a package of them honestly thinking that, "This will take some getting used to!"
Just like switching from white to whole grain, omitting sugar from your diet and making better choices- sometimes it takes some palate adjustments.
However, these were different...in fact these are 100x's BETTER than any other corn tortilla out there! I will NEVER go back because these are truly the best!

We have made taco's for dinner and tonight I took some pics for ya! Tacos are a staple dinner here and the tortillas make these tacos to die for! Check it out....
I went back for another but here is what we have:
  • Ground Turkey cooked with chili powder, cumin, garlic and pepper
  • Sharp cheddar cheese (not light, but light would be fine :) I know yellow cheese is a no-no in Mexican cuisine, but we have lots of it in my house right now :)
  • Vidalia onion's, diced
  • Tomatoes, diced
  • Spring greens, cilantro and fresh squeezed lime juice
  • Warm Sprouted Grain Corn Tortillas (You can fry your own crispy taco shells too...in Olive Oil...Want to know how??? Let me know ;)
  • Beans on the side...I like my black beans but these were re-fried (No Fat, No Fillers!)
  • I also add La Victoria Hot Taco Sauce...adds a nice hotness to any Mexican dish! Check it out!

CHOBANI-Super Stoked!!!

UPDATE/REVISION/FURTHER EXPLANATION:
I am updating this blog because I was so excited when I wrote the first time that I don't think I really explained that I got this package FREE...Yes, FREE from Chobani!!!!
I wrote them an email explaining how much I love their yogurt and they sent me this lovely variety box to try for FREE!!! YAY!!!

I'm SO excited I can hardly contain myself!
Today, after work, I pulled into my driveway and saw a white box on the front porch. When I went inside and opened the front door to the porch I SCREAMED with excitement to see THIS sitting on my front porch!
I was so flipping excited I could not contain myself!
I brought that big, beautiful box in the house to see what was inside! It felt like Christmas! And L@@K....LOOK what was inside!
Can you see me BEAMING (albeit tired and not looking the loveliest after work :)!!!
Chobani sent me a CASE of yogurt in every flavor to try! It was packaged in ice packs and styro peanuts (which I will recycle:)
Look at that...We have pomegranate, blueberry, raspberry, strawberry, honey, plain, pineapple, vanilla, strawberry banana! I can't wait to try each and every one. My daughter is crazy with excitement too and wants to try them all!

Please...Indulge me for a moment...
This is reinforcement to me that good things happen when you don't complain about everything. We live in a world where we like to complain and share our grievances. Trust me, there is a time and place for everything, when appropriate. However, when you like something...let it be known too and watch what happens. AND...even if nothing happens, trust me, you've made someones day!

Going to go enjoy some Chobani now :)
